In the second edition of the textbook, three new chapters have been included, keeping in line with the current trends of behavior modification, organ transplantation and complementary medicine. A major objective of producing this book, with its updated content is to meet expectations and needs of students, faculty and other professionals, medical and non-medical, involved in health care and diet therapy.

This book is primarily designed as a text and a reference source for students of nutrition, nursing, medicine and professionals from other healthcare related programs. The organization of the book has been planned to provide an introduction to nutrition and health interrelationship; the basic scientific principles of diet therapy and their application in patient centered nutrition care; MNT of various disorders of different parts and systems of the body with inclusion of Novel Corona Virus Disease 2019 (COVID 19) and finally the future of dietetics. Three new chapters have been included in this 2nd edition, that is, Behaviour Change and Diet Counselling; Nutrition in Solid Organ Transplant, and an Introduction to Traditional Indian Medicine, starting with basic Ayurvedic Principles. The importance of patient awareness and counselling is well recognized now in increasing patient compliance and participation in their own care. Solid organ transplants are increasingly being done, requiring special pre and post-transplant nutritional care. There is now substantial study and research within the realm of holistic health care, showing that traditional medicine systems, especially Indian, can complement modern therapeutic medicine. There is a wealth of wisdom in traditional medicine regarding health and disease in our ancient traditions and India is playing a lead role in WHO’s attempts to integrate the two, that is, integrative medicine which blends the modern with the traditional. We have included an introductory chapter on principles of Ayurveda with a focus on their dietary recommendations.
